Measure from the real standing surface. Shoes, an anti-fatigue mat, or a walking pad all raise the body, so the tray and desk should rise by the same amount.
Use the keycap top, not the tray board, as the posture reference. A thick keyboard can make a correct-looking tray feel too high once typing starts.
